1/4 cup mayonnaise
2 tablespoons honey
1 tablespoon Dijon mustard
1 tablespoon yellow mustard
2 teaspoons fresh lemon juice, from the juice of one lemon
2 tablespoons barbecue sauce
1/4 teaspoon salt
1/2 cup pickle juice
1/2 cup whole milk
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
16 chicken tenderloins, about 1 3/4 pounds
6 cups peanut oil
1 egg
8 pickle chips from 1 jar pickle chips (16 oz)
3 cups all-purpose flour
1/4 cup powdered sugar
2 tablespoons baking powder
1 tablespoon kosher salt
1 tablespoon paprika
2 teaspoons chili powder

Steps:

  • Chick-fil-A sauce:.
  • In a small bowl whisk together mayonnaise, honey, mustard, lemon juice, and bbq sauce.
  • Fried Chicken:.
  • In a medium bowl whisk together wet ingredients, add chicken, making sure to coat evenly. Allow chicken to marinate for 20 minutes. Meanwhile, in a medium-sized pot, over medium-high, heat oil to 325 degrees F While oil heats, in a medium bowl, whisk togethers dry ingredients.
  • Reserving the marinade, remove the chicken to a plate. Whisk the egg into the marinade. Dip the chicken into the egg mixture, one piece at a time, shaking off excess egg mixture. Dredge chicken pieces in flour mix, making sure to coat evenly on both sides. Repeat the breading process (egg mixture to flour mix) one more time, set chicken aside. Line a baking sheet with paper towels.
  • Once oil is heated, cook chicken until golden brown on each side and opaque in the center, about 2 to 3 minutes. Place cooked chicken on prepared baking sheet to drain. Serve with Chick-fil-A sauce.

10 oz grilled, sliced into strips chicken tenders
2 cups sliced green leaf lettuce leaves
¼ cup thinly sliced red onion
2 cups shredded Monterey Jack and Cheddar Cheese blend
? cup thinly sliced, seeded, chopped (optional) cucumbers
2 thinly sliced tomatoes
4 large, flour or wheat tortillas
½ cup prepared guacamole
½ cup mayonnaise
½ cup plain yogurt
½ tsp garlic powder
½ tsp salt
¼ tsp cumin powder
2 tsp lime juice
3 tbsp chopped cilantro
as needed milk
potato chips
avocado lime ranch dressing

Steps:

  • Combine the guacamole, mayonnaise, yogurt, cilantro, garlic powder, salt, cumin, lime juice, and cilantro. Whisk until smooth.
  • Adjust the consistency of the dressing with milk as desired. Keep chilled.
  • Transfer the tortillas to a working board and assemble the wrap following the order of ingredients: cheeses, chicken, red onion, tomato, cucumbers, lettuce, and 2 tablespoons of the dressing. Repeat until 4 wraps are made.
  • Serve the chicken cool wrap with potato chips and extra dressing on the side. Enjoy!
