Want a home cooked meal and you've nothing in, the main shops are shut and the only thing meaty is a Peperami snack? Make this simple dish from you cupboard ingredients. It is tasty and it takes only as long as it does to boil the pasta! You could add garlic and extras like parsley, peppers (capsicum), cream cheese etc., this is just the basic recipe. Serves 1

Number Of Ingredients 10

125 gm. dried pasta (follow packet instructions for cooking)
1 peperami snack (ordinary size) sliced/chopped into thin pieces (other salamies could be used)
1 white onion - finely diced
2 spring onions - finely sliced
1 tbsp. plain flour
1 coffee mug milk
15 gm. Parmigiano Reggiano or Parmesan cheese, finely grated
Salt and pepper to taste
Olive oil for frying
1 ladle of water from cooking the pasta

Steps:

  • Put the pasta on to cook according to instructions on the packet.
  • While that is going gently fry the peperami (or similar salamis) in a large pan
  • Add the white onion and soften.
  • Add the flour and mix in well.
  • Stir in the milk, mix in well and cook, creating a white sauce.
  • Add the grated cheese and mix in.
  • Add the spring onions and mix them in.
  • Stir well as the sauce thickens.
  • Add the cooked and drained pasta.
  • Add a ladle of the pasta water, if it looks too thick.
  • Season to taste with salt and pepper.
  • Serve hot.

A great recipe for Homemade Pepperoni Pizza that can be adapted to accomodate any topping you like.

Total Time 50 minutes

Yield Serves 2

Steps:

  • Pizza Base
  • Mix salt and yeast together in a jug with the water. Place flour in a bowl, make a well in the centre and add the water mixture along with the oil
  • Use a wooden spoon to mix everything to create a wet dough. Put on floured surface and need for 5mins.
  • Place in greased bowl and cover with tea towel. Leave at room temperature to rise for 30mins (should double in size).
  • Round into pizza base and stab with fork several times.
  • Pizza Topping
  • Spread tomato puree over the base. Add chopped tomatoes on top then add onion and garlic.
  • Sprinkle over cheese and arrange Pepperoni. Season with salt and pepper and sprinkle on basil.
  • Cooking
  • Place on oiled baking sheets.
  • Add topping.
  • Cook at 200° for 20mins.
