Maine’s Red Hot Dogs, and The New England Frankfurt Roll ... image

A recipe for use with the New England Hot Dog Bun Pan from USA Pan®. Adapted from the recipe provided by USA Pan®. Laying out the dough in one piece in the pan, then slicing into individual buns after baking, follows what's available from grocers and in restaurants and lobster pounds.

Number Of Ingredients 10

1-1/4 cup water, lukewarm
2 tbsp butter, softened
1 egg
3 cup AP flour, sifted
2/3 cup potato flakes, instant
1/4 cup dry milk
2 tbsp sugar
2 tsp yeast, instant
1 tsp salt
shortening (for greasing one of the mixing bowls)

Steps:

  • Mix all ingredients in a large bowl, or the bowl of your stand mixer.
  • Once all the ingredients are mixed, knead until dough is shiny and elastic, about 10 minutes by hand and 5 in a mixer.
  • Place dough in a lightly greased bowl and cover with plastic wrap and a dish towel. Allow to rise in a warm place for about 2 hours.
  • Dough should be puffy. Deflate the dough and stretch it to fit in the New England hot dog bun pan. If it doesn't quite fit to the edge, that's ok. Cover with plastic wrap and a dish towel, and leave it for 15 minutes.
  • Go back and push the dough to fit corners and level as much as possible. Cover loosely with plastic wrap as the dough will rise taller than the pan, cover with a dish towel, and let rise about another hour.
  • When you are ready to bake the buns, preheat an oven to 375°F degrees (350°F for a convection oven).
  • Take off the plastic wrap. Bake the buns for 18 minutes. Cool on a rack for about 5 minutes. Remove the buns from the pan to cool completely.

Chopped onions on a hot dog are good but this onion sauce a traditional topping for a New York hot dog is better.

Number Of Ingredients 9

3 large sweet onions (peeled and sliced or diced)
2 tablespoons olive oil
3 garlic cloves, minced
1/3 cup ketchup
1/4 teaspoon cayenne (optional)
1/4 teaspoon red pepper flakes, crushed (adjust for heat, I option for it!) (optional)
1 tablespoon paprika (Smoked paprika is a nice treat!I use 1/2 smoked and 1/2 sweet)
1/4 cup vinegar
salt

Steps:

  • Sauté garlic and onions in olive oil.
  • When onions are tender add ketchup, choice of cayenne or pepper flakes and paprika.
  • Simmer over a low heat for about 15 minutes.
  • Add vinegar and simmer 30-45 minutes.
  • Add salt to taste.
  • Serve over grilled hot dogs in steamed buns.
