Rainbow on the outside and rainbow on the inside, this Skittles™ cake is a definite showstopper!

3 boxes Betty Crocker™ Cake Mix White
3 3/4 cup water
1 cup vegetable oil
9 eggs
1 bag (41 oz) of Skittles™
Food coloring (Green, Yellow, Orange, Red, and Purple)
3 tubs Betty Crocker™ Whipped Frosting Vanilla

Steps:

  • Preheat oven to 350°F. Mix three boxes of cake mix with the water, oil, and eggs, blending until incorporated.
  • Divide cake mix evenly into five bowls, and then dye each bowl with food coloring until you’ve achieved your desired colors (green, yellow, orange, red, and purple).
  • Prep your cake pans (8 or 9 inch round) by cutting five circles of parchment paper and placing them in the bottom of each pan, then coating each pan with non-stick cooking spray before adding cake mix.
  • Bake cakes for 30-35 minutes or until a toothpick comes out clean. Once baked, let cakes cool completely before icing.
  • Once cooled, cut the tops of the cakes so they can stack evenly (you can skip the top layer). Spread a layer of icing on top of the first cake, and then place the next cake on top, followed by another layer of icing, repeating until you have stacked all five layers.
  • Once stacked, ice the outside of the cake, making sure the icing is thick enough that Skittles™ will be able to stick to the cake. Once iced, begin placing each row of Skittles™ corresponding with the cake color until you have decorated the entire cake with Skittles™. Make sure the Skittles™ are in even lines, so you can easily slice through the cake.

2 (16.25-oz.) boxes white cake mix
2 cups water
1 cup vegetable oil
6 large eggs
1 tablespoon strawberry gelatin dessert powder (such as Jell-O)
1 tablespoon lemon gelatin dessert powder (such as Jell-O)
1 tablespoon orange gelatin dessert powder (such as Jell-O)
1 tablespoon lime gelatin dessert powder (such as Jell-O)
1 tablespoon grape gelatin dessert powder (such as Jell-O)
Red, yellow, orange, green, purple food coloring
2 cups (16 oz.) unsalted butter, softened
2 (16-oz.) pkg. powdered sugar (about 7 cups)
Red, yellow, orange, green, purple food coloring
2 cups Skittles candy
Blue food coloring
3 jumbo marshmallows, halved

Steps:

  • Prepare the Cake: Preheat oven to 350°F. Grease and flour 5 (8-inch) round cake pans. Stir together cake mix, water, oil and eggs until fully incorporated and batter is not lumpy.
  • Divide batter among 5 bowls (about 1 1/2 cups per bowl). In 1 bowl, add strawberry gelatin powder and 2 drops of red food coloring or until desired color. In second bowl, combine lemon powder and yellow food coloring until desired color. In third bowl, combine orange powder and orange food coloring until desired color. In forth bowl, combine lime powder and green food coloring until desired color. In fifth bowl, combine grape powder and purple food coloring until desired color. 
  • Pour individual batters into prepared cake pans, and bake in preheated oven until wooden pick inserted comes out with moist crumbs, 18 to 20 minutes. Let cool completely. Flatten tops of cakes by trimming off rounded tops. 
  • Prepare the Frosting: While cakes cook, beat butter in the bowl of a stand mixer until fluffy and lightened in color, about 3 minutes. Add powdered sugar, and beat until smooth and fully combined. Scoop about 3 tablespoons of frosting into each of 5 small bowls. Color 1 bowl with 1 drop of red food coloring, 1 bowl with orange, 1 bowl with yellow, 1 bowl with green, and 1 bowl with purple. Set aside for decorating.
  • Place the red cake layer on a cake plate, and spread a thin layer of the remaining uncolored frosting on top. Top with the orange cake layer, and spread a thin layer of uncolored frosting on top. Repeat process with yellow cake layer, then green. Place a clean, empty, skinny can with top and bottom removed (such as an asparagus can) on center top of 4 cake layers. Press can down through all 4 layers, and remove to create a hollowed-out center. Discard cake center or reserve for another use. Fill inside of cake with Skittles. Spread a thin layer of uncolored frosting on fourth cake layer. Top with purple cake layer, and spread a thin layer of uncolored frosting on top and sides of cake. Refrigerate 30 minutes. 
  • Meanwhile, drop 2 to 3 drops of blue food coloring in remaining frosting until desired color. Remove cake from refrigerator, and frost completely with blue frosting. 
  • Fill 5 individual ziplock plastic bags or piping bags with each color of reserved frosting (1 color per bag), and pipe a rainbow on 1 side of the cake. Dab a little frosting on the sticky side of a marshmallow half, and stick it to the bottom of the rainbow, resembling clouds. Repeat with remaining marshmallows, 3 halves on each side of rainbow.
  • Place all 5 bags of colored frostings in a large piping bag fitted with a star tip, and pipe a border on the top of the cake. Sprinkle any remaining Skittles around border of the cake. Slice cake, release the Skittles, and serve!
